This super easy vegan feta recipe doubles as a zero waste hack... win win!
Ingredients
An empty olive jar -with the brine!
Block firm tofu
Method
Simply slice your firm tofu into chunks and add to the olive jar brine.
Allow to marinate overnight... enjoy!
This will last 4-6 days in the fridge. I especially enjoy this on a Greek salad or in filo parcels like pictured here.
The filo parcels contain a mix of green lentils, spinach, garlic & feta. Remember to cool your mix before adding into parcels. I gently baste them with olive oil and sprinkle on black sesame seeds before going into the oven.
Easy recipes to use this in include:
👉The classic greek salad- salad, tomatoes, red onion, olives, cucumber, basil & vegan feta. Lather in good quality olive oil, salt & pepper.
👉Spinach, lentil & feta parcels.
Make filo pastry parcels with a delicious filling.
Cook down an onion, garlic and add frozen spinach & prepped green lentils. This is delicious with added za'atar!
Cut slices of filo pastry into strips, depending on size.
Prep the filo pastry by brushing in olive oil between each sheet until 4 thick.
Allow mixture to cool, add the feta and fold into triangular parcels.
Finish with olive oil & black sesame seeds & bake at 180'C for ~15 mins until golden.
👉Upside down tartlets.
Use puff pastry to make open tarts featuring vegan feta. You can even make these upside down like the viral hack.
Delicious with balsamic glaze.
