Ingredients
4 cups dandelion petals
4 cups water
2 slices orange
2 slices lemon
2 cups sugar
Method
Wash your dandelions
Remove yellow petals from the dandelion head
Add dandelion petals, water and citrus to a pan and gently heat for about 30 minutes
Add sugar, increase the heat until bubbling and heat for another 30 minutes - until desired honey texture - thought expect some thickening on cooling!
Add to a sterilised, reused, jar

I have used cups here as a more convenient measure when foraging - the main consideration is the ratio of dandelion petals: water as 1:1.
