Cheese Sticks
Versatile nut-free vegan cheese

Ingredients

Coating:

  • 2 tbsp flour
  • 2 tbsp golden breadcrumbs
  • 2 tbsp panko breadcrumbs (or substitute with cornflakes or more golden breadcrumbs)
  • 2 tbsp nutritional yeast
  • Large pinch of salt

'Egg Wash':

  • 2 tbsp flax seeds
  • Water (enough to cover flax seeds)
  • Pinch of turmeric (optional)

Cheese Sticks:

  • Rice cakes (available from Asian supermarkets, often used for tteokbokki)
  • Oil for frying

Instructions

  1. Prepare the Coating:some text
    • In a bowl, mix together the flour, golden breadcrumbs, panko breadcrumbs, nutritional yeast, and salt. Set aside.
  2. Prepare the 'Egg Wash':some text
    • In a small pot, cover the flax seeds with water and heat until bubbly (about 5 minutes).
    • Strain out the seeds, keeping the gloopy water.
    • Mix in a pinch of turmeric for color (optional).
  3. Alternative: You can use aquafaba or another egg replacer. If not using a binder, soak the rice cakes in warm water for 30 minutes first.
  4. Soak the Rice Cakes:some text
    • Soak the rice cakes in warm water to soften them before coating and frying for the best texture.

Mozzarella Sticks

  1. Setup:some text
    • Prepare two bowls: one with the coating mixture and another with the 'egg wash'.
    • Heat about 1 cm of oil in a small pan over medium heat.
  2. Coating and Frying:some text
    • Dip each rice cake into the 'egg wash', then into the coating mixture. Repeat the process to ensure a good coating.
    • Fry the coated rice cakes in the hot oil until golden brown on all sides.
  3. Serving:some text
    • Serve immediately with a dipping sauce and a pinch of salt.

Halloumi Fries

  1. Setup:some text
    • Soak the rice cakes in warm water to soften.
    • Roll the softened rice cakes in olive oil, then in the coating mixture (omit the breadcrumbs for this version).
  2. Frying:some text
    • Heat a skillet or griddle pan over medium-high heat.
    • Fry the coated rice cakes for about 1 minute on each side until they are lightly blistering and have nice grill marks.
  3. Serving:some text
    • Serve hot with a pinch of salt and a squeeze of fresh lemon juice.
