- In a bowl, mix together the flour, golden breadcrumbs, panko breadcrumbs, nutritional yeast, and salt. Set aside.

- In a small pot, cover the flax seeds with water and heat until bubbly (about 5 minutes).
- Strain out the seeds, keeping the gloopy water.
- Mix in a pinch of turmeric for color (optional).
- Alternative: You can use aquafaba or another egg replacer. If not using a binder, soak the rice cakes in warm water for 30 minutes first.
- Soak the Rice Cakes:some text
- Soak the rice cakes in warm water to soften them before coating and frying for the best texture.
Mozzarella Sticks

- Prepare two bowls: one with the coating mixture and another with the 'egg wash'.
- Heat about 1 cm of oil in a small pan over medium heat.

- Dip each rice cake into the 'egg wash', then into the coating mixture. Repeat the process to ensure a good coating.
- Fry the coated rice cakes in the hot oil until golden brown on all sides.

- Serve immediately with a dipping sauce and a pinch of salt.
Halloumi Fries

- Soak the rice cakes in warm water to soften.
- Roll the softened rice cakes in olive oil, then in the coating mixture (omit the breadcrumbs for this version).

- Heat a skillet or griddle pan over medium-high heat.
- Fry the coated rice cakes for about 1 minute on each side until they are lightly blistering and have nice grill marks.
